Peach Chicken Salad – A Cooking Failure

Last week I crossed another wedding gift off my list to use within year 1 of marriage (side note - my anniversary is less than 1 month away....definitely not going to get around to using everything in the next month. Sigh.). My sister had raved about this peach chicken salad recipe, said both her and her husband absolutely loved it, so I had to give it a go.  It even got a 5 star rating, so I figured it had to be good. I whipped out my blender for the first time, and got started.

 

Lots of fresh fruit/veggies, and it was my first time ever buying mint for a recipe:

 

It was pretty simple, just cook the chicken....

 

...mix together with the peaches and other veggies.....

 

Then use the blender to mix up this mint concoction. Here's where things went awry. I'm not sure if this is how the mint dressing was supposed to look:

 

But I plowed forward, figuring I did it right....

 

Pour the dressing over the mixture, and refrigerate for a while:

 

Mmmm doesn't this look like a healthy, yummy salad?

 

Well it's not. For as much as my sister raved about it, I REALLY disliked it. I wouldn't say hate, because I was able to force half of it down my throat, but I just didn't think it was good. Maybe I used too much mint? I'm not a minty person, and to me the mint tasted too overpowering. Jay gobbled it down as usual, saying "this is really good! I love it!"....as he always does when I cook, just to encourage me to keep doing it....but later admitted he didn't think it was that good either.

 

I had to document the use of my blender (because who knows when I'll be whipping that puppy out again), but all in all, I tossed this recipe and won't make it again. Maybe you guys will love it - I know my sister did!

I finally admitted to Allen the other night that cooking was the one wifely duty I was going to consistently fail him on. Maybe one day… or maybe not. At least you are trying!

This totally cracks me up! I didn’t realize you were a fellow non-chef like me… one more thing we have in common! ;) As for the blender though – hilarious. Especially because I use my blender basically every day and between the two of us, sometimes twice a day. We loooooove smoothies! And, they’re great for the non-chef…. banana, yogurt, frozen strawberries, and blend. Easy even for a non-chef to whip up!

Back to Cooking.

Since I was a horrible wife and left Jay for three weeks when I was down in North Carolina, I knew I had to do something to make up for it.  The easiest way to get to his heart?  Cooking.  I started up my trend of cooking again last night, and I have to say, it was delicious.  We had a night full of Amanda Pair - I threw on the SUPER cute apron she sent me as a wedding gift, and cooked up a yummy recipe she posted on her blog a little while ago.

Do I look like a domestic house wife or what?? (Don't let it fool you:)

I was intimidated by the recipe at first (pretty much like every recipe), but it was actually really easy.  Not sure exactly what it's called, but it's basically little lasagna rolls:

Gail hit it on the head — the first thing I thought when I saw the first photo was “pearls and an apron!” So very domestic! I hope the recipe turned out good. We tried it with chicken a few weeks back, and it was delish.

Waffle-y Goodness.

I really need to get moving on using all of our registry items at least once in the next year.....I tried cooking a few times, but after  the holidays, it just kind of dropped off.  Since this past weekend Jay and I had NO plans (which felt like heaven), I tried to give it a go at making Belgian waffles from scratch.  The first few had some holes in them, but hey, they tasted the same:)

Of course I had my little helper every step of the way (she likes to sit on my feet):

So there is a little silver tray that comes with the waffle maker, and I had no idea what it was for so I just stashed it away.  Then this mess ensued, and I was all "ahhh that's what it's for!" (to catch the mess):

Again, doesn't look the prettiest (that seems to be a trend with my cooking), but Jay liked it so that's all that matters!

You know what else I think I figured out from cooking? I don't like food as much when I make it.  For some reason, knowing exactly what is in a meal kinda weirds me out. Is that weird?  Hopefully I'll get over that soon:)

Oh girlfriend, you SO need to get the Belgian mix for these waffle makers (we have this exact one and Nick is OBSESSED with it) Look for this one at your grocery — MUCH easier to make ‘em!

You know what is so funny? I have a blog post about waffles in my queue. I wrote it a few weeks ago and then thought, “No one wants to read about my stupid love of waffles.” But I love this post and might have to rethink mine :)

I have the same waffle maker and I love it!! I’ve had it for a few years now and I can never get the right amount to make it NOT overflow. Oh well! I pour the batter in and then before closing the top, I sprinkle some chocolate chips in for chocolate chip waffles. Good stuff.
